SERVES:
makes one 9 x 13-inch baking dish

INGREDIENTS:

5 cups 1-inch cubed 2 - 3 day old bread
5 large eggs
1 1/4 cups heavy cream
1 1/4 cups milk
1 loosely pack cup light brown sugar
1 tsp vanilla
1 tsp ground cinnamon
1 tsp ground ginger

2 cups 1/4 - 1/2 inch thick small sliced apple
1/2 cup raisins
1/4 cup bourbon

PROCEDURE:

Preheat the oven to 350 degrees and also butter one 9 x 13-inch baking dish.

Use a large mixing bowl to combine 5 large eggs with 1 1/4 cups heavy cream, 1 1/4 cups milk, 1 loosely packed cup light brown sugar, 1 tsp vanilla, 1 tsp ground cinnamon and 1 tsp ground ginger and whisk everything to combine.

Then add 5 cups of 1-inch cubed 2 - 3 day old bread and let that start absorbing the custard.

It's up to you whether or not you want to peel the apples...cut them into 1/4 - 1/2-inch thick small pieces (you'll need 2 cups total) and then add that to the bowl with the bread and add 1/2 cup raisins and 1/4 cup bourbon.....mix to combine.....add that to the buttered baking dish and place it on the center rack of the preheated oven.


It'll take just about 40 minutes to bake and it will be a nice golden brown on top and just a little bit spongy when it is done.

HINTS:

A combination of white, wheat and sourdough bread works nicely in this but you can use whatever you have on hand.......and just one kind if you like.
