Recipe: Green Beans with Bacon, Mushrooms and Tomatoes

SERVES:
4-6 as a side

INGREDIENTS:

  • 6-7 slices bacon, diced

  • 2 cups sliced or diced mushrooms

  • 3 cups parboiled green beans (frozen, defrosted and drained are fine)

  • Approx. 1 1/2 cups diced fresh tomato

  • Salt and pepper to taste

PROCEDURE:

Get started by using a large pan to saute 6 or 7 diced slices of bacon until they're nice and crisp.

Then drain the crispy bacon on paper towels, pour off half of the rendered bacon fat. Put the pan back on the stove and add 2 cups of sliced mushrooms.

Once the mushrooms have browned up a bit, add 3 cups of green beans to the pan and let those go along for a few minutes.

Then add the crispy bacon back to the pan. Add a handful of chopped tomatoes, season with salt and pepper to taste and it is good to go!

HINTS:

If you wanted to, you could use fresh green beans in this recipe. You would just need to use another pan on the stovetop to steam the fresh green beans for 4-5 minutes while the mushrooms are browning up.
