Recipe: Pita Pockets with Smoked Turkey, Jalapeno Jack Cheese and Sundried Tomato Guacamole

SERVES:
makes 8 pita pockets
INGREDIENTS:
8 mini pita pockets
6-8 ounces jalapeno jack cheese, sliced
6-8 ounces smoked sliced turkey
for the guacamole:
1 large ripe avocado
1 small clove garlic, minced
pinch salt
2-3 Tbs lime juice
1/4-1/3 cup chopped oil cured sundried tomatoes
1/4 cup fresh chopped cilantro
PROCEDURE:
Scoop the ripe avocado into a mixing bowl and add a little minced garlic, a pinch of salt and a squeeze of fresh lime juice and mash it up.
That's really the simplest form of guacamole but you can add some optional ground cumin to that and some chopped oil cured sundried tomatoes and a little handful of fresh chopped cilantro and fold that together.
Slice the pita pockets half way through and tuck 2-3 slices of the jack cheese into that. Add 1 folded slice of smoked turkey, and then add a good dollop of the guacamole and lightly press it together.
HINTS:
This is a Super Bowl friendly recipe and you could "steal" a bit of the big batch of guacamole that you're serving with tortilla chips to make this version for mini pita pocket sandwiches.
