Recipe: Cantaloupe Skewers with Fresh Mozzarella Cheese, Salami and Mint

SERVES:
Makes approx 3 dozen
INGREDIENTS:
- Approx. 6-8 ounces fresh mozzarella cheese
- Olive oil and black pepper for cheese
- 1/2 large ripe cantaloupe
- Limejuice and salt for melon (optional)
- 12 slices deli salami, each cut into 3 strips
- 36 mint leaves
- 36 skewers (or frill picks)
PROCEDURE:
Cut the fresh mozzarella cheese into 3/4 - 1-inch cubes....toss those with extra virgin olive oil and a good crack of black pepper and then cut the cantaloupe in half....through the stem end....scoop out the seeds and cut it lengthwise into 1 1/2 inch thick strips.
You probably won't need a whole cantaloupe for this and the next step is to use your knife to separate the fruit from the skin and then cut that fruit crosswise into 1 1/2-inch pieces.
When you are done with that, put those pieces into a mixing bowl and add a squeeze of limejuice.....or even lemon juice....season with salt and gently toss to combine.
Then use your knife to slice the salami into 1-inch wide strips.
To assemble the skewers, wrap each piece of mozzarella with one strip of salami....skewer that....add 1 folded mint leaf and then skewer one piece of cantaloupe...keeping the widest part at the bottom.
HINTS:
Substitute prosciutto for the salami and basil for the mint. Leave out the step of marinating the cubed melon if you likeā¦..especially if the melon is super ripe already.
